Resumen
El propósito inmediato de las organizaciones es lograr ventajas competitivas sostenibles
para cumplir sus objetivos. En ocasiones estos pueden verse afectados por los efectos
negativos de los riesgos que puedan presentarse, que en consecuencia son una condición
latente que captan una posibilidad de pérdida hacia el futuro y aunque son un hecho
probabilístico sobre el que se tiene cierta incertidumbre y pueden ser provocados por
factores internos o externos a la organización, tienen el poder de originar efectos
indeseados en el cumplimiento de los objetivos de las instituciones. Ante esta realidad ha
surgido como una necesidad para las mismas la gestión de riesgos con el propósito de
lograr ejercicios de planeación más acertados y ejecución de las actividades y recursos de
manera más controlada. De esta situación no escapa la industria cubana y como parte de
ella la industria cárnica, es por ello que la presente investigación propone aplicar un
procedimiento de gestión de los riesgos para la calidad en diferentes procesos de esta
industria que forman parte de su cadena de suministros para de esta forma contribuir a
detectar, evaluar y controlar las fallas y sus efectos en la calidad de los productos
resultantes y contribuir a satisfacer las exigencias de los clientes y la inocuidad de los
alimentos.
The immediate purpose of organizations is to achieve sustainable competitive advantages to meet their objectives. Sometimes these may be affected by the negative effects of the risks that may arise, which consequently are a latent condition that capture a possibility of loss towards the future and although they are a probabilistic fact about which there is certain uncertainty and may be provoked by internal or external factors to the organization, they have the power to originate undesired effects in the fulfillment of the objectives of the institutions. Faced with this reality, risk management has emerged as a need for them in order to achieve more successful planning exercises and execution ofactivities and resources in a more controlled manner. This situation does not escape the Cuban industry and as part of it the meat industry, that is why this research proposes to apply a procedure of risk management for quality in different processes of this industry that are part of its supply chain In this way, it helps to detect, evaluate and control failures and their effects on the quality of the resulting products and contribute to satisfy the demands of customers and the safety of food
